Mint Chocolate Oreo Cake!




Mint Chocolate Oreo Cake

LouAnn Trischler - inspired by Joy

1 box chocolate fudge cake mix + eggs, oil, water (according to box)
1 package Cool Mint Oreo cookies
6 oz cream cheese
½ cup butter
2 tsp vanilla
4 cups sifted powdered sugar
2 tsp mint extract (may need more)

Directions
Cake:
Bake as directed on box, for 2 round pans. Cool completely.

Frosting:
Beat together cream cheese, butter, vanilla and mint extract until fluffy.
Gradually add powdered sugar, beating until smooth. Cover and refrigerate until cake is completely cool.

Cookies:
Reserve 12 cookies for decoration. Crush rest of cookies into crumbles.

Assembly:
Spread top of one cake with mint frosting. Sprinkle 2/3 oreo crumbles over layer of frosting.
Place second cake layer over frosted layer. Cover sides and top with remaining frosting.
Place 12 whole cookies around top of cake, on their sides like a wheel.
Sprinkle remaining cookie crumbles around top of cake.

Refrigerate until ready to serve.
